pomace

The crud left over when grapes have been pressed (and in which turnips are steeped to made "brovade" in here in Friuli) is called "pomace". The word can be used for any fruit debris (it derives from the Latin word for apple and was originally used by cider-makers). Drained pomace or pomace brandy (grappa) is known as "marc" in France.

In a non-technical context, you could describe the stuff as "fruit waste" or some such if you think that would be clearer.

What do you suggest instead of \"pomace\", or \"marc\"/\"press cake\" for the dried fruit waste? I\'d be happy to add it to the glossary (and give you credit).

disagree Anthony Green : but I am very grateful for the glossary, Giles, and hope my recent wine-maker clients benefit from it - I had terrible trouble with a lot of the lexis when I started out for them

La parola francese indica la vinaccia e, per estensione, il distillato da essa ottenuto; però hai ragione a dire che in inglese, di solito, denota soltanto il liquore.

Ho controllato sul WEBSTER'S
marc = refuse of grapes, seeds, fruits, etc. after pressing; a brandy distilled from this this.

pomace (from latin pomacium, cider---> pomum = apple)= the crushed pulp of apples or other fruit pressed for juice; the crushed matter of anything pressed, as seeds for oil.

If I'm not mistaken "marc" is the name of French grappa!

Lived in France for a while but bought my grappa from Italy as the French variety was definitely NOT to my taste!
