I'm sure we've had some discussion of this before, probably in FR > EN, but I'm blowed if I can remember the details.
Anyway, I don't know if my suggested FR term is valid or not, but the meaning is certainly clear enough: it is a point in the process (e.g. designing and launching a new product) where if there is a quality problem, the process will be halted (hence 'hold') until the problem has been resolved.

: not sure it fits here (associated with the terms complaints and metrics, so it might refer to number of quality problems) - Your explanation is right but "point d'arrêt" refers to a quality control process not to products put on hold

: IN EN, we wouldn't usually use the countable noun 'a hold' to describe such a product. It does, however, have another meaning in this context.

Discussion
Il s'agissait d'inspection mais c'est la même chose.
On avait aussi POINT D'ARRÊT/D'INTERVENTION dans une autre réponse sur Proz.com. Donc nous sommes dans la même ligne en proposant POINTS D'ARRÊT.
La traduction par POINTS D'ARRÊT QUALITÉ est largement employée ici au Canada et je pense en Europe, dans les procédés de fabrication.
