I guess it all depends on the shape of the cheese, when I think of a brick, I think of something rectangular, so I would leave out "squares".

I know bricks aren't generally cubic, but if you look at these cheese cubes they aren't either:

Kind of brick-shaped, wouldn't you say?

I think we use cube very loosely when it comes to cheese and that cheese cube conveys the idea of ladrillo de queso. They should actually be called cheese cuboids but that sounds much less appetising, in fact disgusting...so we just call them cubes and don't worry too much about being geometrically precise.
