I think Gayle is on the right track. Literally "on the fly"

à la volée, I think, means that the bread is fed into the slicer - whether pushed manually or on a feeding belt...

It is recommended against coupe à la volée in the meat industry to avoid injuries

The CLC Conveyorized Laser Cutting System is an industrial
machine that can cut material 72 inches (1.8 m) wide (optionally
wider) into any length pattern. The material is transported
under the gantry where it is "cut-on-the fly" while material is
moving. The material can be fed directly from rolls or sheets.
The software automatically divides long patterns into "slices"
(frames) that are cut continuously.

I think that it means not to cut loaves too rapidly, forcefully. the bread slicer that I 'know' in our village has hinged slicing mechanism (I don't know what it's called) that is lowered manually on a loaf of bread to make nice clean even slices. I'm sure that it wouldn't work very well if the baker pushed on the hinged slicing mechanism. It would probably squash the bread and make a mess of the slices...

Yore right. I didn't finish what I was thinking. Careless, quick action can lead to accidents.
