"Lombo de corvina suado sobre caldeirada de legumes". From a restaurant menu. I know we 'sweat' onion and root vegetables, but do we really sweat fish?

From all the "suado" recipes I found this seems to mean cooking in liquid.
Poached is probably the best term, but I also found some recipes using "suado" where the fish was wrapped in aluminum foil together with the other ingredients, like olive oil and seasoning and then cooked in the oven. According to my cookbooks this is called oven steamed.

Sweat
You sweat almost everything. If you put something in a pan, cover it but not completely, it will sweat.

it's like Leila says, but in a culinary context sweat can sound a little off putting!
