English term or phrase: lay down a cellar
October 2007 was seriously wet. The 18th is a date etched in our diaries. We had been invited for a meal by Joan, who had suggested we go in the campervan to give ourselves the option of staying over if we wanted to have a drink. Continuing rain gave us pause for thought but we decided to chance it. This proved very wise, for the following reason. In the early 90s she and her late husband had laid down a reasonable cellar but as things turned out their stocks of wine exceeded demand. On the basis that you can’t take it with you, Lindy had extracted three bottles for the evening between five of us, including one abstemious driver in the other couple. The wines were awarded high scores by the ad-hoc panel. A decision to round the evening off with something Hungarian, virulent and bright green is best glossed over. So we slept in the campervan. It rained all night during which time, had we but known it, our earlier wise decision was beginning to look less wise.

disagree  Jennifer Levey: Your webrefs refer to the construction or installation of wine-cellars. But 'lay down a cellar' refers to the process of selecting and acquiring bottles of wine to fill a wine-cellar.

  -> you are right about the example, but "armar" can be used figuratively. "Voy a armar una biblioteca" can mean both building shelves or collecting books.

constituir una colección de vinos

Explanation:
As mentioned elsewhere on this page, “lay down a cellar” is an expression used by British wine connoisseurs and sommeliers in relation to the process of selecting and acquiring bottles of wine to fill a wine-cellar, whether for personal consumption, for sale (as from an œnothèque, wine bar or other commercial outlet), or as an investment that can be passed on to future generations. ‘lay down’ probably refers to the fact that bottles of fine wine are usually stored in an almost horizontal position.

In the absence of an equivalent expression in Spanish, and because a quasi-literal translation (eg: armar una bodega) strongly (if not exclusively) implies the construction of a place to store wine, it will be necessary to explain the concept, rather than translating literally or even figuratively.

I suggest:
(they) had laid down a reasonable cellar but ...
-->

Lay down significa establecer. ¿Cuál es el termo que interesa? Tú lo tienes adelante. Por consiguiente, cellar por stocks of wine.
