Here it's called a butterfly type damper! For water, so is it a valve?
That would only work if this were a wood-fired oven! Otherwise, there wouldn't be any kind of 'tirage' for it to regulate!
I think 'damper' is actually a bit of a misnomer, since in reality, I think its function is to allow steam to escape (or not).
