'show' here is the noun, referring to 'wine shows', which (in view of the fact they clearly involve judging) are more likely to be 'concours' than 'salon' (cf. all the medals that we see wine blazoning from this or that 'concours')

I would just like to add that the original text says 'adopted', and NOT 'coined' — it doesn't mean they 'invented' the term, but simply took to using it (since the term 'white Burgundy' certainly already existed!) — perhaps, therefore, 'retenu' or some such might be safer than 'forgé'?
