me gustaría encontrar una alternativa de traducción a "explotar".

Contexto: Je suis restaurateur, exploitant l'etablissement...... depuis 1988.
Depuis 1997 et jusqu'en mars 2007, j'ai mis cet établissement en gérance. Auparavant, je l'exploitais moi-même. Le restaurant est exploité en nom propre.

"...y tengo el establecimiento a mi nombre desde.."sería la forma de decirlo aunque la traducción literal podría ser "explotar" o "comercializar"

Sería como tenir: avoir en sa possession. Pero aquí creo que hace alusión más bien a algo mas, por ej: administrar. El término que se me vino a la cabeza primero es "trabajar" trabajar el establecimiento, pero opino que es demasiado coloquial.
