Which term would be appropriate to use on a Job Application CV for a 'partnered' gay male candidate, applying for a job in Italy with a medium sized business? He is 'married' in the eyes of the UK government, as they have a Civil Partnership, but I am not sure what to advise for a job in Italy....

Non c'entra nulla con la traduzione, ma mi chiedo davvero perche' il suo stato civile sia importante su un CV. Per curiosita': si usa cosi in UK?

it really depends on how much personal data the client wishes to disclose!

unione civile (con compagno dello stesso sesso)

in italian it is called unione civile. I wouldnot use the word coniuge as it refers to marrige not yet possible in italy

coniugato / sposato civilmente

The fact that this marriage is not possible in Italy is not "so" important... (although not to neglect, e.g. what about "pensione di reversibilità" in such cases? see also recent discussions on polygamy of migrants coming to Italy).
But honestly I would not write anything - and actually I don't do - in a job application.
