To tie fat around lean meats or fowl to keep them from drying out during roasting. The fat bastes the meat while it cooks, keeping it moist and adding flavor. The fat is removed a few minutes before the meat is finished.

E’una particolare tecnica che consiste nell’avvolgere un pezzo di pesce o di carne con fette di pancetta, lardo o comunque prosciutto grasso. Bardare è d’obbligo specialmente con le carni di vitello che sono molto magre, per evitare che la cottura arrosto le asciughi rendendole stoppose; il grasso, sciogliendosi durante la cottura, insaporisce la carne mantenendola morbida.

agree blatea : Assolutamente sì! Il termine deriva dal "BARDARE" un cavallo: renderlo più bello. nel caso culinario il "BARDARE" un piatto di carne significa anache arricchirlo nel gusto.
