This is like saying I saw a chinese man, and saying I saw ching chew (or some chines name).

What I am trying to explain here is that a waterweed is a certain type of plant.

waterweed--- let's go for this definition: ANY of various submersed aquatic herbs of the genus Elodea, native to the New World, having opposite or whorled one-nerved narrow leaves and small axillary flowers.

What I am trying to say here is that a "waterweed" is a type of weed, it is not ANY weed the grows in water. That is why you cannot translate is as: حشيشة مائية. Since this will imply that you saw some type of weed that grows in water, not "THE waterweed".

A waterweed is singular, so your translation is correct: حشيشة الماء

I would for this translation.

since a waterweed means: حشيشة الماء then this is the correct answer, because if you translate it as حشيشة مائية then this could mean ANY weed that grows in the water.

but the word waterweed refers to: حشيشة الماء , a certain type of weed:
Waterweed has slender stems up to 3 meters long with three leaves in clusters around the stems. Leaves are bunched toward the ends of the stems where new growth occurs; older leaves usually decay and break off the lower stems. Waterweed may rapidly colonize an area and then decline in abundance within 5 to 7 years.

حشيشة مائية

وهي الحشيشة التي تعيش في الماء إما عائمة في الماء أو تقوم بتثبيت جذورها في قاع المياه أو علي حواف المجرى المائي مثل نبات البردي
